- 1 1/2 c. yellow cornmeal
- 3 Tbsp. flour
- 1 tsp. salt
- 1 tsp. soda
- 2 c. fresh buttermilk
- 1 egg
Directions

1Melt bacon drippings in a 9-inch iron skillet until very hot. During this time, sift dry ingredients into bowl.

2Add buttermilk and egg; beat until batter is smooth.

3Add 1/2 of drippings to batter and stir well.

4Pour batter into skillet and bake at 450° for 20 to 25 minutes.
