  • 1 c. corn meal
  • 1 c. flour
  • 1/4 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. soda
  • 1 c. sour milk or buttermilk
  • 1 egg, well beaten
  • 2 Tbsp. melted shortening

Directions

    Preheat oven to 400°.

    Lightly coat 16 (2 1/2-inch) muffin pans with oil spray.

    Mix flour, corn meal, baking powder, salt and sugar.

    Stir in milk, oil and eggs until all are moistened. Bake in 400° oven for 25 minutes or until wooden pick inserted in centers comes out clean.

    Let muffins cool in pan for 10 minutes before turning out.
