- 1 c. corn meal
- 1 c. flour
- 1/4 c. sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. soda
- 1 c. sour milk or buttermilk
- 1 egg, well beaten
- 2 Tbsp. melted shortening
Directions

1Preheat oven to 400°.

2Lightly coat 16 (2 1/2-inch) muffin pans with oil spray.

3Mix flour, corn meal, baking powder, salt and sugar.

4Stir in milk, oil and eggs until all are moistened. Bake in 400° oven for 25 minutes or until wooden pick inserted in centers comes out clean.

5Let muffins cool in pan for 10 minutes before turning out.
