- 1/4 c. butter or margarine
- 1 c. corn meal
- 1 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 2 Tbsp. sugar
- 1 1/4 c. buttermilk
- 1 slightly beaten egg
- 1/4 c. corn oil
Directions

1Melt butter in a 375° oven for about 5 minutes in skillet. Combine corn meal, buttermilk, egg and oil to the other dry ingredients until dry ingredients are moistened.

2Remove skillet from hot oven.

3Pour batter into skillet.

4Bake at 375° until golden brown.
