  • 1/4 c. butter or margarine
  • 1 c. corn meal
  • 1 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 Tbsp. sugar
  • 1 1/4 c. buttermilk
  • 1 slightly beaten egg
  • 1/4 c. corn oil

Directions

    Melt butter in a 375° oven for about 5 minutes in skillet. Combine corn meal, buttermilk, egg and oil to the other dry ingredients until dry ingredients are moistened.

    Remove skillet from hot oven.

    Pour batter into skillet.

    Bake at 375° until golden brown.
