- 1/2 c. corn meal (yellow)
- 1 1/2 c. flour
- 1/4 c. sugar (optional)
- 1/2 tsp. salt
- 4 tsp. baking powder
- 1 egg
- 1 c. buttermilk
- 1/4 c. shortening or cooking oil
Directions

1Preheat oven to 425°.

2Sift together corn meal, flour, sugar, salt and baking powder.

3Add egg, milk and shortening; mix well by hand until all ingredients are well blended.

4Bake in 8-inch square pan or greased muffin pans 20 to 25 minutes.
