- 1 c. all-purpose flour
- 1 c. yellow corn meal
- 1/4 c. sugar
- 4 tsp. baking powder
- 3/4 tsp. salt
- 2 eggs
- 1 c. milk
- 1/4 c. cooking oil or shortening, melted
Directions

1Stir together the flour, corn meal, sugar, baking powder and salt.

2Add eggs, milk and oil or melted shortening.

3Beat just until smooth (do not overbeat).

4Turn into a greased 9 x 9 x 2-inch baking pan.

5Bake in a 425° oven for 20 to 25 minutes. Makes 8 or 9 servings.
