Ingredients

  • 1/2 c. yellow corn meal
  • 1 c. self-rising flour
  • 1 dash or 1/2 tsp. salt
  • 4 tsp. baking powder
  • 1 egg
  • 1 c. milk or a little more
  • 1/4 c. softened shortening

Directions

    Mix dry goods in a medium bowl.

    Soften shortening in the baking pan or iron skillet in oven at 300°.

    Pour into the bowl with the dry goods.

    Turn oven to 425°.

    Add egg and milk.

    Stir. Pour into pan/skillet.

    Bake at 425° for 20 to 25 minutes until golden on top.
