- 1 pkg. medium size carrots
- 1/2 c. sugar
- 1/2 c. white vinegar
- 3/4 c. Crisco vegetable oil
- 1 red onion (small to medium)
- 1 bell pepper (small to medium)
- dash of salt
- dash of pepper
Directions

1Boil carrots until tender.

2Peel carrots and wash. Cut into rings of medium thickness.

3Cut the onion and bell pepper into rings (large onion and bell pepper rings may be halved or quartered, if desired).

4Mix sugar, vinegar and vegetable oil in a large bowl. Stir well. Add other ingredients and stir until all are well coated.

5Cover dish with a tight lid and turn often until marinated, for 3 hours or better still, overnight.
