  • 1/2 c. cornmeal
  • 1/2 c. all-purpose flour
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 1/2 c. milk
  • 2 Tbsp. shortening, melted

Directions

    In a bowl, combine the cornmeal, flour, sugar, baking powder and salt.

    In another bowl, blend egg, milk and shortening; stir into dry ingredients.

    Pour into a greased 8 x 4 inch loaf pan. Bake at 425° for 15-18 minutes or until a toothpick inserted near the center comes out clean.

    Cool in the pan for 10 minutes before removing to a wire rack.

    Serve warm.
