- 1/2 c. cornmeal
- 1/2 c. all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 egg, beaten
- 1/2 c. milk
- 2 Tbsp. shortening, melted
Directions

1In a bowl, combine the cornmeal, flour, sugar, baking powder and salt.

2In another bowl, blend egg, milk and shortening; stir into dry ingredients.

3Pour into a greased 8 x 4 inch loaf pan. Bake at 425° for 15-18 minutes or until a toothpick inserted near the center comes out clean.

4Cool in the pan for 10 minutes before removing to a wire rack.

5Serve warm.
