  • 1 c. corn meal
  • 1 c. bread flour
  • 2 Tbsp. sugar
  • 1 1/4 c. milk
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 2 Tbsp. melted butter or fat
  • 2 well beaten eggs

Directions

    Sift dry ingredients.

    Beat in separate bowl the milk, shortening and egg; add to dry ingredients.

    Beat lightly until thoroughly mixed.

    Partly fill hot muffin tins.

    Bake in quick oven (450°) for 15 to 20 minutes.

    Yields 2 1/2 dozen small muffins.
