- 1 c. corn meal
- 1 c. bread flour
- 2 Tbsp. sugar
- 1 1/4 c. milk
- 1 tsp. salt
- 1 tsp. baking powder
- 2 Tbsp. melted butter or fat
- 2 well beaten eggs
Directions

1Sift dry ingredients.

2Beat in separate bowl the milk, shortening and egg; add to dry ingredients.

3Beat lightly until thoroughly mixed.

4Partly fill hot muffin tins.

5Bake in quick oven (450°) for 15 to 20 minutes.

6Yields 2 1/2 dozen small muffins.
