  • 1 c. corn meal
  • 1 c. flour
  • 1/4 c. sugar
  • 3 tsp. baking powder
  • 2 Tbsp. oil
  • 1 c. buttermilk
  • 1 tsp. baking soda
  • 1 egg white
  • 3 ears fresh sweet corn, cooked, cooled and cut off cob
  • 1/2 medium onion, minced
  • 1/4 sweet red bell pepper, minced

Directions

    Combine all ingredients and stir.

    Roll and drop by tablespoon on hot nonstick griddle or frypan until golden brown.

    Makes 30 small cakes.
