Ingredients

  • 1 large onion, chopped
  • 2 medium green peppers, chopped
  • 1/2 c. butter or margarine
  • 1/4 c. flour
  • 2 c. frozen corn
  • 2 c. long grain rice, cooked
  • 1 (14 1/2 oz.) can diced tomatoes with liquid
  • 4 hard-cooked eggs, chopped
  • 2 1/2 c. shredded sharp Cheddar cheese, divided
  • 2 Tbsp. Worcestershire sauce
  • 2 to 3 tsp. hot pepper sauce
  • 2 tsp. salt
  • 1 tsp. pepper

Directions

    In large skillet, saute onion and peppers in butter until tender.

    Stir in flour and remove from heat.

    Add remaining ingredients except for 1/2 cup cheese.

    Pour into a greased 2 1/2-quart baking dish.

    Bake uncovered at 350° for 45 minutes. Top with remaining cheese.

    Let stand 2 minutes.
