- 1 large onion, chopped
- 2 medium green peppers, chopped
- 1/2 c. butter or margarine
- 1/4 c. flour
- 2 c. frozen corn
- 2 c. long grain rice, cooked
- 1 (14 1/2 oz.) can diced tomatoes with liquid
- 4 hard-cooked eggs, chopped
- 2 1/2 c. shredded sharp Cheddar cheese, divided
- 2 Tbsp. Worcestershire sauce
- 2 to 3 tsp. hot pepper sauce
- 2 tsp. salt
- 1 tsp. pepper
Directions

1In large skillet, saute onion and peppers in butter until tender.

2Stir in flour and remove from heat.

3Add remaining ingredients except for 1/2 cup cheese.

4Pour into a greased 2 1/2-quart baking dish.

5Bake uncovered at 350° for 45 minutes. Top with remaining cheese.

6Let stand 2 minutes.
