  • 2 (16 oz.) cans cream-style corn
  • 2 (16 oz.) cans whole kernel corn
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 (2 oz.) jar pimentos, diced
  • 1/3 c. milk
  • 1 1/2 c. cracker crumbs
  • 1/4 c. melted margarine
  • salt and pepper
  • 2 c. grated sharp Cheddar cheese

Directions

    Mix corn, onion, pepper, pimentos, milk, margarine, cracker crumbs, salt and pepper to taste.

    Put into a 13 x 9-inch casserole; top with shredded cheese.

    Bake at 350° for 30 minutes or microwave for 15 minutes, until set and cheese is melted. Serves 10.
