- 1 can whole kernel corn, drained
- 1 can cream-style corn
- 1 packages corn muffin mix
- 1 large red bell pepper, diced
- 2 large eggs, beaten
- 1 stick butter, melted
- 1 cup shredded cheddar cheese
Directions

1Preheat oven to 350AF.

2In a large bowl, stir together the 2 cans of corn, corn muffin mix, red bell pepper, butter, and eggs.

3Pour into a greased 9 by 13-inch casserole dish.

4Bake for 45 minutes, or until golden brown.

5Remove from oven and top with Cheddar.

6Return to oven for 5 to 10 minutes, or until cheese is melted.
