- 2 (16 oz.) cans cream-style corn
- 1/2 c. yellow cornmeal
- 1/3 c. milk
- 2 eggs, beaten
- 6 Tbsp. vegetable oil
- 1 Tbsp. chopped pimento
- 1 Tbsp. chopped onion
- 1 Tbsp. chopped jalapenos
- 1 tsp. salt
- 1/4 tsp. garlic powder
Directions

1In a large bowl, beat the eggs, then add the milk, corn, oil, pimentos, onion, jalapeno, salt, garlic and cornmeal.

2Mix until well blended.

3Pour into a lightly greased 1 1/2-quart casserole. Bake for 1 hour or until set at 350°.

4On removal from oven, sprinkle with 2 cups grated cheese.
