- 1 can diced tomatoes (with juice)
- 1 large onion, chopped
- 2 medium green peppers, chopped
- 1/2 stick butter
- 1/4 c. all-purpose flour
- 2 c. (1 can) drained whole kernel corn
- 2 c. cooked rice
- 4 hard-boiled eggs, chopped
- 2 1/2 c. shredded cheese (save 1/2 c. to put on top)
- 2 Tbsp. Worcestershire sauce
- salt and pepper to taste
Directions

1Cook onion and peppers in butter until tender. Add flour and mix. Add remaining ingredients and put in a large greased casserole.

2Top with remaining 1/2 cup cheese.

3Cook at 350° for 45 minutes.
