- 1 can whole kernel corn
- 1 can cream-style corn
- 3 Tbsp. green pepper
- 1 small onion, chopped
- 1 stick oleo
- 2 beaten eggs
- 2 c. Cheddar cheese, shredded
- 1 pkg. Jiffy corn bread mix
- 1 pt. sour cream
Directions

1Saute pepper and onions in oleo.

2Add eggs to corn, then green pepper (diced) and onions.

3Add muffin mix.

4Mix well.

5Spread in 9 x 12-inch casserole pan.

6Then spread sour cream over top of this.

7Sprinkle with Cheddar cheese over top.

8Garnish with paprika.

9Bake 40 minutes at 325°.

10Remove and cover for a few minutes before serving.
