- 1 can drained whole kernel corn
- 1 can cream style corn
- 2 beaten eggs
- 1 pkg. Jiffy corn muffin mix
- 1 onion, finely chopped
- 1 stick margarine
- 1 pt. sour cream
- 2 c. grated Cheddar cheese
- salt and pepper to taste
Directions

1Saute onions and pepper in margarine.

2Fold corn into beaten eggs.

3Add Jiffy mix to egg mixture, then add onions and peppers. Put into a well greased 9 x 13-inch pan.

4Spread with sour cream and cheese; sprinkle with paprika.

5Bake at 375° for 40 minutes. After removing from oven, cover for a few minutes before serving.
