  • 1 can cream-style corn
  • 1 can whole kernel corn, undrained
  • 2 eggs
  • 1 box Jiffy corn muffin mix
  • 1/2 bell pepper
  • 1/2 onion
  • 1 stick margarine
  • salt and pepper to taste
  • grated Cheddar cheese

Directions

    Saute pepper and onion in margarine; mix all other ingredients and add pepper, onion and butter.

    Mix well.

    Bake for 50 minutes at 350°.

    Add grated cheese to top.

    Bake until cheese is melted.

    Best served at room temperature.
