Ingredients

  • 1 8 1/2 oz. pkg. cornbread mix
  • 4 eggs, beaten
  • 2 1/2 c. grated longhorn cheese
  • 1 8 oz. can diced green chiles
  • 1 17 oz. can creamed corn
  • 1 17 oz. can kernel corn
  • 1/2 c. oil
  • 2 1/2 c. milk
  • 2 Tbsp. sugar

Directions

    Mix cornbread, milk and oil.

    Stir in beaten eggs, both cans of corn, sugar and 1 1/2 c. cheese.

    Pour mixture into a greased 11 x 13 inch pan.

    Bake at 400° for 25 minutes then top casserole with remaining cheese and bake 20 minutes more.

    Can be served warm or cold.
