Ingredients

  • 1 can whole corn
  • 1 can creamed corn
  • 3 or 4 slices bacon, cut up
  • 2 eggs
  • 1 c. milk
  • 1 c. cracker crumbs
  • 1/4 c. chopped onion
  • 1/4 c. celery, chopped
  • 3 Tbsp. pimientos, chopped
  • 3 Tbsp. red pepper, chopped
  • 3 Tbsp. green pepper, chopped
  • salt and pepper to taste

Directions

    Saute bacon, onion, celery and peppers until soft.

    Transfer to 1-quart casserole.

    Add all ingredients; cover with additional cracker crumbs.

    Bake in 350° oven until brown and crusty.

    When a knife is inserted and comes out clean, then the casserole is done.
