- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1/2 c. butter
- 2 c. cooked rice
- 1 (16 oz.) can whole tomatoes, chopped
- 1 tsp. Worcestershire sauce
- 1/2 tsp. Tabasco
- 2 hard-cooked eggs, chopped
- 1 (16 oz.) can whole kernel corn, drained
- 1 Tbsp. sugar (optional)
- pepper
- 1 c. grated Cheddar cheese
Directions

1Brown onion and bell pepper in butter.

2Cook rice.

3Place all ingredients except cheese in a 3-quart saucepan; mix well.

4Cook on top of stove over low heat 1 hour.

5Pour into greased 9 x 13-inch baking dish.

6Top with cheese.

7Bake at 325° for 15 minutes.
