- 1 (16 oz.) can cream-style corn
- 2 eggs, beaten
- 1 box corn muffin mix
- 1 small onion, chopped
- 2 Tbsp. green pepper
- 1 stick margarine
- 1 c. sour cream
- 2 c. grated Cheddar cheese
- salt and pepper to taste
Directions

1Saute onions in margarine.

2Fold corn into beaten eggs.

3Add muffin mix to corn mixture.

4Then add rest of ingredients, except sour cream and grated cheese.
