  • 1 small onion
  • 1/4 lb. margarine (1 stick)
  • 1 can whole kernel corn
  • 3 eggs, beaten
  • 1 c. shredded or grated sharp cheese
  • 1/2 green pepper
  • 1 can cream-style corn
  • 1 small (8 1/2 oz.) box Jiffy corn muffin mix

Directions

    Saute onion, green pepper, margarine and salt.

    Combine with all ingredients except cheese and pour into large casserole (greased).

    Top with grated cheese.

    Bake at 350° for 40 to 45 minutes.
