- 1 small onion
- 1/4 lb. margarine (1 stick)
- 1 can whole kernel corn
- 3 eggs, beaten
- 1 c. shredded or grated sharp cheese
- 1/2 green pepper
- 1 can cream-style corn
- 1 small (8 1/2 oz.) box Jiffy corn muffin mix
Directions

1Saute onion, green pepper, margarine and salt.

2Combine with all ingredients except cheese and pour into large casserole (greased).

3Top with grated cheese.

4Bake at 350° for 40 to 45 minutes.
