- 1 small onion, chopped
- 1/2 c. margarine
- 1 (1 lb.) can cream-style corn
- 3 eggs, beaten
- 1 (8 oz.) carton sour cream
- 1/2 green pepper, chopped
- 1 (1 lb.) can whole grain corn, undrained
- 1 box Jiffy corn muffin mix
- 1 c. grated cheese
Directions

1Saute onion and green pepper in margarine.

2Mix corn and muffin mix.

3Add well-beaten eggs, onion and green pepper.

4Spoon into well-greased 9 x 13-inch pan.

5Sprinkle with grated cheese and dot with sour cream.

6Bake, uncovered, at 350° for 40 minutes.
