  • 8 oz. sour cream
  • 1 can whole corn
  • 1/2 stick oleo
  • 1 onion
  • 1 box Jiffy corn muffin mix
  • 2 eggs, well beaten
  • 1 can creamed corn
  • 1/2 green pepper (optional)
  • shredded Cheddar cheese

Directions

    Saute onion and pepper in oleo.

    Mix corn, eggs, onion, pepper and corn muffin mix.

    Pour into 9 x 13-inch pan sprayed with Pam. Put sour cream by teaspoon on top, then sprinkle cheese on top. Bake for 30 minutes at 350°.
