- 8 oz. sour cream
- 1 can whole corn
- 1/2 stick oleo
- 1 onion
- 1 box Jiffy corn muffin mix
- 2 eggs, well beaten
- 1 can creamed corn
- 1/2 green pepper (optional)
- shredded Cheddar cheese
Directions

1Saute onion and pepper in oleo.

2Mix corn, eggs, onion, pepper and corn muffin mix.

3Pour into 9 x 13-inch pan sprayed with Pam. Put sour cream by teaspoon on top, then sprinkle cheese on top. Bake for 30 minutes at 350°.
