- 1/2 c. margarine
- 1 (17 oz.) can corn with liquid
- 1 (17 oz.) can creamed corn
- 8 1/2 oz. Jiffy cornbread mix
- 2 eggs, beaten
- 1 c. sour cream
- 1 c. sharp Cheddar cheese, grated
- chopped onion to taste (optional)
Directions

1Melt margarine in a 9 x 13-inch baking dish.

2Add corn and cornbread mix; gently mix with fork.

3Add eggs; mix with fork. Drop sour cream by tablespoons in different areas on top of corn mixture.

4Fold in gently.

5Sprinkle with Cheddar cheese.

6Bake at 350° for 20 to 30 minutes, until mixture is firm.

7Let cool slightly before cutting into squares.

8Also good served at room temperature.
