Corn Cheese Casserole

  • 18 double saltine crackers, crushed
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 3 eggs, separated
  • 1 c. milk, scalded
  • 1/4 tsp. Tabasco sauce
  • 1 1/2 c. Cheddar cheese, shredded
  • 1 Tbsp. butter, melted
  • 1 (17 oz.) can cream-style corn
  • paprika

Directions

    Combine cracker crumbs, mustard and salt; set aside.

    Beat egg yolks well.

    Gradually stir in scalded milk and Tabasco sauce. Mix in cheese and corn.

    Beat egg whites until stiff (not dry) and fold into mixture.

    a 1 1/2 quart casserole dish. Cover with cracker crumb mixture; spoon melted butter over top. Bake at 325° for 40 minutes or until golden brown and slightly firm to touch.
