- 18 double saltine crackers, crushed
- 1 tsp. dry mustard
- 1 tsp. salt
- 3 eggs, separated
- 1 c. milk, scalded
- 1/4 tsp. Tabasco sauce
- 1 1/2 c. Cheddar cheese, shredded
- 1 Tbsp. butter, melted
- 1 (17 oz.) can cream-style corn
- paprika
Directions

1Combine cracker crumbs, mustard and salt; set aside.

2Beat egg yolks well.

3Gradually stir in scalded milk and Tabasco sauce. Mix in cheese and corn.

4Beat egg whites until stiff (not dry) and fold into mixture.

6a 1 1/2 quart casserole dish. Cover with cracker crumb mixture; spoon melted butter over top. Bake at 325° for 40 minutes or until golden brown and slightly firm to touch.
