Ingredients
- 2 Tbsp. margarine
- 1/2 c. chopped onion
- 2 Tbsp. flour
- 1 qt. milk
- 1/2 c. thinly sliced celery
- 2 tsp. sugar
- 1 1/2 tsp. salt
- 1/8 tsp. ground white pepper
- 3 c. corn kernels
- 2 eggs
- 1/4 c. chopped parsley
- 3 slices crisp bacon, crumbled
Directions

1In medium saucepan, melt butter and saute onion (3 minutes). Stir in flour; cook and stir for 1 minute.

2Blend in milk; cook, stirring constantly, until boiling and mixture thickens.

3Stir in celery, sugar, salt, pepper and corn.

4Cover and simmer over low heat for 10 minutes.

5In small bowl, lightly beat eggs.

6Stir 1 cup hot mixture into eggs.

7Return to soup.

8Heat but do not boil. Stir in chopped parsley.

9Sprinkle with crumbled bacon.

10Makes about 6 servings.
