- 2 Tbsp. oil
- 1/2 c. chopped onion
- 1/2 c. grated or chopped carrots
- 1/2 c. celery, chopped fine
- 1 c. potatoes, in 1/2-inch cubes
- 2 c. water
- 1 can cream-style corn (16 oz. or 2 c.)
- 1 1/2 c. milk
- 1 Tbsp. butter
- 1/4 tsp. dried parsley
- 1/4 tsp. dried basil
- salt and pepper
Directions

1Saute onion in oil.

2Cook rest of vegetables in 2 cups water for 10 minutes or until soft.

3Add cooked onion, corn, milk and butter.

4Add seasonings with salt and pepper to taste.

5Makes 8 cups of soup.

6This can be frozen.
