Ingredients

  • 2 Tbsp. oil
  • 1/2 c. chopped onion
  • 1/2 c. grated or chopped carrots
  • 1/2 c. celery, chopped fine
  • 1 c. potatoes, in 1/2-inch cubes
  • 2 c. water
  • 1 can cream-style corn (16 oz. or 2 c.)
  • 1 1/2 c. milk
  • 1 Tbsp. butter
  • 1/4 tsp. dried parsley
  • 1/4 tsp. dried basil
  • salt and pepper

Directions

    Saute onion in oil.

    Cook rest of vegetables in 2 cups water for 10 minutes or until soft.

    Add cooked onion, corn, milk and butter.

    Add seasonings with salt and pepper to taste.

    Makes 8 cups of soup.

    This can be frozen.
