- 1 small red pepper, finely chopped
- 3 green onions, finely chopped
- 2 c. fresh or frozen corn
- 1 3/4 c. skim milk
- 1 Tbsp. flour
- 1 tsp. soy sauce
- pinch of nutmeg
Directions

1In saucepan, add onions and pepper; cook until tender.

2In processor, blend 1 cup milk, flour and 1 cup corn on low speed until smooth.

3Stir corn mixture with the remaining cup of corn and other ingredients.

4Bring to a boil, then reduce heat to low. Simmer, uncovered, for 5 minutes.
