Ingredients
- 1/2 c. chopped green onion
- 1/4 tsp. oil
- 2 1/2 c. chicken stock
- 2 c. 1% milk
- 3 c. potato cubes (1 1/4 lb.)
- 2 pkg. (10 oz. each) frozen corn kernels
- 1/4 c. instant nonfat dry milk
- 1/4 tsp. dry mustard
- 1/8 tsp. salt
- pinch or 1/8 tsp. fresh ground black pepper
Directions

1Saute green onion in oil in a large nonstick saucepan.

2Add chicken stock, milk and potatoes.

3Bring to a boil, lower heat and simmer until potatoes are tender, about 12 minutes.

4Add corn and cook 1 minute more.

5Remove 2 cups of the chowder to a food processor, puree and return to saucepan.

6Stir in dry milk, mustard, salt and pepper.

7Serve immediately.
