Corn Chowder

Ingredients

  • 1/2 c. chopped green onion
  • 1/4 tsp. oil
  • 2 1/2 c. chicken stock
  • 2 c. 1% milk
  • 3 c. potato cubes (1 1/4 lb.)
  • 2 pkg. (10 oz. each) frozen corn kernels
  • 1/4 c. instant nonfat dry milk
  • 1/4 tsp. dry mustard
  • 1/8 tsp. salt
  • pinch or 1/8 tsp. fresh ground black pepper

Directions

    Saute green onion in oil in a large nonstick saucepan.

    Add chicken stock, milk and potatoes.

    Bring to a boil, lower heat and simmer until potatoes are tender, about 12 minutes.

    Add corn and cook 1 minute more.

    Remove 2 cups of the chowder to a food processor, puree and return to saucepan.

    Stir in dry milk, mustard, salt and pepper.

    Serve immediately.
