Corn Chowder

Ingredients

  • 2 oz. bacon or salt pork
  • 2 slices onion
  • 1 1/2 c. diced raw potatoes
  • 2 c. fresh corn, cut from cob, or 1 (No. 2) can cream-style corn
  • 3 c. hot water
  • 3 Tbsp. butter
  • 1 c. evaporated milk or coffee cream
  • 2 1/2 tsp. salt
  • dash of pepper
  • 2 tsp. finely chopped parsley
  • sprinkle of paprika

Directions

    Chop bacon and onion coarsely; put into soup kettle.

    Saute until onion is soft and bacon is done.

    Add potatoes, corn and water.

    Cover and simmer until potatoes are tender.

    Add butter, milk and seasonings.

    Reheat to boiling.

    Serve piping hot with a little parsley sprinkled over the top, or a few dashes of paprika. Makes 5 servings.
