- 1 onion, chopped
- 5 Tbsp. bacon fat
- 1 clove garlic, chopped
- 1 can cream-style corn
- 1 egg, beaten
- 2 c. milk
- 1/2 c. corn meal
- red pepper to taste
- black pepper to taste
- salt to taste
- Italian bread crumbs
- butter or margarine
Directions

1Saute chopped onion in bacon fat with finely chopped garlic. Add corn.

2Add egg beaten with milk.

3Add corn meal and season to taste with salt, red and black pepper.

4Stir over medium heat until mixture is thick.

5Pour into buttered casserole.

6Sprinkle top with bread crumbs and dot with butter.

7Place in oven to keep warm.

8Serves 6 to 7.
