  • 3/4 c. green onion, chopped
  • 1/2 green pepper, chopped
  • 1/4 tsp. salt
  • 1/4 c. butter or oleo
  • 1 (16 oz.) can whole corn, drained
  • 1 (16 oz.) can cream-style corn
  • 3 eggs
  • 1 box corn muffin mix
  • 1 1/2 c. shredded Cheddar cheese
  • 1/3 c. milk

Directions

    Saute onion, green pepper and salt in the butter. Combine both cans of corn, eggs, muffin mix, milk and 1 cup of cheese. Place in a 1 1/2-quart casserole. Top with remaining cheese and bake at 350° for 40 minutes.
