Corn Dog Casserole

Ingredients

  • 1 cup sliced green onion
  • 1 cup chopped artichoke heart
  • 34 cup black beans
  • 1 lb chicken mango jalapeno sausage
  • 1 egg
  • 34 cup milk
  • salt, pepper, garlic powder
  • 1 tablespoon honey
  • 1 (8 1/2 ounce) packagedry cornbread mix
  • 1 cup shredded cheddar cheese, divided

Directions

    Slice sausages lengthwise into quarters, then cut into thirds.

    Saute sausages for 5 minutes or until lightly browned.

    Add to onion/artichoke/bean mixture and mix all together.

    Set aside 1/2 of mixture.

    Preheat oven to 400 degrees F

    In a large bowl combine the egg, milk, honey and seasoning.

    Add all but reserved 1/2 sausage mixture.

    Stir in corn bread mix and 1/2 cup shredded cheese.

    Mix all together and spread mixture into a shallow 3 quart baking dish.

    Top with reserved sausage mixture and remaining shredded cheese.

    Bake uncovered in preheated oven for 30 minutes, or until golden brown.
