  • 2 cans creamed corn
  • 1 pkg. Mexican cornbread mix
  • 1 c. grated Cheddar cheese
  • 1/3 c. oil
  • 4 eggs
  • 1 small onion, chopped

    Beat eggs well.

    Mix corn, oil and cheese and onion.

    Mix well. Add to corn meal.

    Pour in oiled 3-quart casserole dish.

    Bake at 375° for 40 minutes.
