- 1 c. corn (canned)
- 2 eggs or egg substitute
- 1/2 c. flour
- 1 Tbsp. sugar
- 1/2 tsp. baking powder
- 1/3 tsp. salt
- pinch of pepper
Directions

1Mix corn and beaten eggs; sift and add dry ingredients.

2Beat until smooth.

3Drop by tablespoon in shortening.

4Brown; turn to brown both sides.

5If cream-style corn is used, a little more flour may be needed. I chill the batter before frying.
