  • 1 c. fresh or canned corn
  • 1 egg yolk, beaten
  • 3/4 c. pancake mix
  • 1 egg white, beaten stiff

Directions

    Drain corn. Add beaten egg yolk.

    Stir in pancake mix and fold in beaten egg white.

    Slide by spoonful into hot oil to brown. Turn once.
