  • vegetable shortening (for deep frying)
  • 2 Tbsp. salad oil
  • 2 eggs, beaten
  • 1 c. flour
  • 2 tsp. baking powder
  • 1 tsp. sugar
  • 1/4 tsp. onion powder
  • 1/4 tsp. salt
  • 1 Tbsp. minced parsley

Directions

    Heat shortening in deep kettle to 375°.

    Add oil to eggs. Combine flour, baking powder, sugar, onion powder and salt.

    Stir into egg mixture with parsley and corn.

    Drop spoonfuls into hot fat.

    Fry 2 to 3 minutes, turning to brown evenly.

    Drain on paper towels.
