Corn Fritters

  • 2 eggs, separated
  • 1 c. fresh corn kernels or use 2 c. canned or frozen corn
  • 4 Tbsp. all-purpose flour
  • 1/2 tsp. salt
  • ground black pepper
  • lard (for deep frying)

Directions

    Combine the egg yolks, flour, salt and pepper in a medium size mixing bowl.

    In a separate bowl, beat the egg whites into the yolk mixture.

    In a deep skillet, melt the lard to a depth of 3-inches and heat it until it registers a temperature of 365° on a deep fat thermometer.

    Drop the fritter batter into the fat by teaspoonfuls, making them all nearly the same shape and size.

    Fry until golden brown, about 3 to 4 minutes.

    Drain well.

    Serve immediately. Makes 18 fritters.
