- 1 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 2 eggs
- 1/2 c. milk
- 1 tsp. melted oil
- 1 (17 oz.) can whole kernel corn
Directions

1Beat eggs with milk and oil.

2Blend in flour, baking powder and salt.

3Add the drained canned corn to the batter.

4Heat shortening or vegetable oil to 375°.

5Oil should be 1 inch deep in the kettle.

6Drop the batter by spoonfuls into the hot oil.

7Cook 1 side until golden brown, then turn to cook other side.

8Only turn the fritters once.

9Remove from oil when done and place on absorbent paper.

10Serve hot with syrup.
