  • 1 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 eggs
  • 1/2 c. milk
  • 1 tsp. melted oil
  • 1 (17 oz.) can whole kernel corn

Directions

    Beat eggs with milk and oil.

    Blend in flour, baking powder and salt.

    Add the drained canned corn to the batter.

    Heat shortening or vegetable oil to 375°.

    Oil should be 1 inch deep in the kettle.

    Drop the batter by spoonfuls into the hot oil.

    Cook 1 side until golden brown, then turn to cook other side.

    Only turn the fritters once.

    Remove from oil when done and place on absorbent paper.

    Serve hot with syrup.
