- 4 to 5 ears corn (3 c. kernels)
- 1 1/2 c. unsifted flour (all-purpose)
- 2 tsp. baking powder
- 1 tsp. salt
- pinch of cayenne pepper
- 2 eggs, beaten
- 1/2 c. milk
- oil for frying
Directions

1Remove kernels from corn.

2In medium bowl, combine flour, baking powder, salt, pepper, eggs, milk and corn.

3Stir until flour is moistened.

4Heat oil (1-inch deep) to 375°.

5Drop batter by tablespoons into hot oil.

6Fry a few at a time until golden brown.

7Remove and drain on paper towels.

8Makes approximately 36 fritters.
