  • 4 to 5 ears corn (3 c. kernels)
  • 1 1/2 c. unsifted flour (all-purpose)
  • 2 tsp. baking powder
  • 1 tsp. salt
  • pinch of cayenne pepper
  • 2 eggs, beaten
  • 1/2 c. milk
  • oil for frying

Directions

    Remove kernels from corn.

    In medium bowl, combine flour, baking powder, salt, pepper, eggs, milk and corn.

    Stir until flour is moistened.

    Heat oil (1-inch deep) to 375°.

    Drop batter by tablespoons into hot oil.

    Fry a few at a time until golden brown.

    Remove and drain on paper towels.

    Makes approximately 36 fritters.
