  • 3 cups Drained Corn (or 4 Ears Of Cooked Sweet Corn)
  • 2 whole Eggs, Beaten
  • 1/2 cups Milk
  • 1/2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Sugar
  • 1/2 teaspoons Salt
  • 1 Tablespoon Vegetable Oil

Directions

    Drain thawed corn and put in a medium mixing bowl. Stir in eggs and milk. Combine flour, baking powder, sugar and salt in a small bowl; stir in corn mixture, and mix gently.

    Heat vegetable oil in a skillet or electric griddle over medium-high heat. Drop batter by 1/4 cupfuls and cook until delicately browned, turning to brown the other side. Serve with butter and maple syrup.
