- 1/4 cup chopped onion
- 4-1/2 cup diced peeled yellow summer squash
- 3 cups fresh corn
- 3 lg. tomatoes, peeled and diced
- 1-1/4 tsp. salt
- 1/4 tsp. pepper
Directions

1Melt butter in a large saucepan over medium heat.

2Saute onion until soft, about 3 to 5 minutes.

3Add remaining ingredients.

4Bring to a boil.

5Reduce heat.

6Cover and simmer for 10 to 15 minutes or until vegetables are done.
