Stuffed Cabbage Rolls

Ingredients

  • cabbage leaves
  • 1 lb. ground beef
  • 1 c. rice
  • 1 medium onion, chopped
  • 1/4 c. oleo
  • 1 small can tomato paste
  • 2 tsp. salt
  • 1 tsp. red pepper (optional)
  • 1 tsp. cinnamon
  • mint leaves
  • 1 (16 oz.) can tomatoes
  • juice of 1 lemon

Directions

    Wilt cabbage leaves in hot water.

    Blend beef, rice, butter, tomato paste, onions, salt, red pepper and cinnamon together. Place 2 heaping tablespoons of mixture in each leaf.

    Roll firmly and secure with toothpick.

    Cover bottom of large saucepan with mint leaves.

    Arrange rolls close together in pan.

    Cover with tomatoes.

    Bake at 350° for 1 hour and 45 minutes.

    Add lemon juice.

    Simmer for 15 to 20 minutes longer, until rice is done.
