Stuffed Cabbage Rolls

- cabbage leaves
- 1 lb. ground beef
- 1 c. rice
- 1 medium onion, chopped
- 1/4 c. oleo
- 1 small can tomato paste
- 2 tsp. salt
- 1 tsp. red pepper (optional)
- 1 tsp. cinnamon
- mint leaves
- 1 (16 oz.) can tomatoes
- juice of 1 lemon
Directions

1Wilt cabbage leaves in hot water.

2Blend beef, rice, butter, tomato paste, onions, salt, red pepper and cinnamon together. Place 2 heaping tablespoons of mixture in each leaf.

3Roll firmly and secure with toothpick.

4Cover bottom of large saucepan with mint leaves.

5Arrange rolls close together in pan.

6Cover with tomatoes.

7Bake at 350° for 1 hour and 45 minutes.

8Add lemon juice.

9Simmer for 15 to 20 minutes longer, until rice is done.
