- 1 c. yellow or white cornmeal
- 1/2 c. fine oat bran
- 1 1/4 c. skim milk
- 1 large egg white
- 3 Tbsp. safflower, corn or olive oil
- 1/2 c. all-purpose flour
- 1/4 c. sugar
- 2 1/2 tsp. baking powder
Directions

1Preheat oven to 400°.

2In a medium bowl, stir together the cornmeal, oat bran, milk, egg white and oil.

3Set aside for five minutes.

4In a small bowl, stir together the flour, sugar, baking powder and salt.

5Stir the flour mixture into the cornmeal mixture.

6Divide batter evenly among 11 or 12 cups of a lightly greased or nonstick spray coated muffin tin.

7Bake 12 to 15 minutes or until the muffins are brown.

8Muffins are best served warm.
