  • 1 c. sifted flour
  • 1 c. yellow corn meal
  • 3 tsp. baking powder
  • 1/4 c. sugar
  • 1 tsp. salt
  • 1 egg, well beaten
  • 1 c. milk
  • 1/4 c. melted shortening

Directions

    Sift together all dry ingredients.

    Combine egg, milk and shortening.

    Add liquids to flour mixture and stir until ingredients are wet.

    Spoon into greased muffin tins and bake at 400° for about 25 minutes.
