- 1 Tbsp. sugar (optional)
- 3/4 c. yellow or white cornmeal
- 2 tsp. baking powder
- 2 egg whites, slightly beaten
- 1 c. skim milk
- 2 Tbsp. canola oil
Directions

1Sift flour, sugar, cornmeal and baking powder together. Combine egg whites, milk and oil.

2Pour into dry ingredients. Stir to blend.

3Pour batter into lightly oiled muffin pan 2/3 full.

4Bake at 425° for 20 to 22 minutes or until golden brown.
