  • 1 c. flour
  • 1 Tbsp. sugar (optional)
  • 3/4 c. yellow or white cornmeal
  • 2 tsp. baking powder
  • 2 egg whites, slightly beaten
  • 1 c. skim milk
  • 2 Tbsp. canola oil

Directions

    Sift flour, sugar, cornmeal and baking powder together. Combine egg whites, milk and oil.

    Pour into dry ingredients. Stir to blend.

    Pour batter into lightly oiled muffin pan 2/3 full.

    Bake at 425° for 20 to 22 minutes or until golden brown.
