- 3/4 c. flour
- 1 1/2 c. cornmeal
- 4 1/2 tsp. baking powder
- 2 Tbsp. sugar
- 1 well beaten egg
- 1 tsp. salt
- 1/4 c. melted margarine or shortening
- 1 1/2 c. milk
Directions

1Stir dry ingredients together.

2Mix egg, milk and shortening. Add to dry ingredients.

3Mix quickly and pour into 12 greased (or Pammed) 2-inch muffin tins or a 9 x 9-inch baking pan.

4Bake at 425° for 20 minutes or until brown.

5Makes 12 muffins.
