- 1/2 c. cornmeal
- 1/2 c. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 c. buttermilk
- 2 egg whites
- 2 Tbsp. canola oil
- 1 c. frozen corn, thawed
Directions

1Combine flour, cornmeal, sugar, baking powder, soda and salt. Combine buttermilk, egg whites and oil.

2Stir into dry mixture just to moisten.

3Fold in corn.

4Bake in muffin cups at 400° for 25 minutes.
